On our 10 acres, we cultivate the complete range type of Alsatian grapes. We possess young vine-stocks as well as older trunks, up to 60 years.
The grapes are harvested entirely by hand, enabling the best to be selectively picked at the most favourable moment maturity-wise.
The fermentations are slow, on native yeasts with a strict temperature management in stainless tank, and for the best cuvées of Pinot we use oak barrels.
The bottling is made at La Vieille Forge Estate during the summer months.
